In the 19th century, as the holiday spread across the country, ;ocal cooks modified the menu both by choice and by necessity. Today, many Americans delight in giving regional produce, recipes, and seasonings a place on the Thanksgiving table. In New Mexico, chilies and other southwestern flavors are used in stuffing, while on Chesapeake Bay, the local favorite, crab, often shows up as a holiday appetizer or as an ingredient in dressing. In Minnesota, the turkey might be stuffed with wild rice, and in Washington, locally grown hazelnuts are featured in stuffung and desserts. In Indiana, persimmon puddings are a favorite Thanksgiving dessert, and in Key West, key lime pie joins pumpkin pie on the holiday table. Most of the regional variations have remained largely a local phenomenon, a means of connecting with local harvests and specialty foods. However this is not true of influential southern Thanksgiving trends that had a tremendous impact on the 20th century Thanksgiving menu. Corn, sweet potatoes and pork form the backbone of traditional southern home cooking and these staple foods provided the main ingredients in southern Thanksgiving additions like ham, sweet potato casseroles, pies and puddings and corn bread dressing. Othe popular southern contributions include ambrosia salads, biscuits, a host of vegetable casseroles, and even macaroni and cheese. Unlike the traditional new England menu, with its mince, apple and pumpkin pie dessert course, southerners added a range and selection of desserts unknown in Northern dining rooms, including regional cakes, pies puddings and numerous cobblers. Southern cookbooks and magazines also helped popularize many of these dishes in places far beyond their southern roots. Some, like sweet potato casserole, pecan pie, and cornbread dressing have become as expected on the Thanksgiving tableas turkey and cranberry sauce. We wanted to share the winning entry: We affectionately refer to Yve's Bistro as the place where everyone knows your name. From Yve, to David, Wendy, Ricardo and the rest of the gang, you are always met with a welcoming hug and smile. The food at Yve's is always delicious and the wine list is extensive. Yve is always ready with a wine recommendation and with their new full bar, everyone is happy. Personally, my favorite meal is the Fettuccini Gorgonzola, a caesar salad and an Yve's Special Souffle to share at the end - but every menu item has been honed and perfected. Hurry in and treat yourself to one of Yves' unforgettable soufflés. A few days ago we had the privilege of participating at the 21st annual Taste of Yorba Linda, at the Yorba Linda Community Center. The theme this year was Fun at 21, and we really got into the spirit by decorating our space Vegas, casino style. The atmosphere was lively and energetic with a DJ entertaining the crowd all evening. There were over 1.200 guests in attendance and we had great participation in our gift card giveaway drawing, where we picked 9 winners to each receive a $25 gift card. We served up our signature dish, Nouille Roulet, along with Mediterranean Salad, and last but definitely not least, Yves' amazing and truly unforgettable Bread Pudding. We had folks coming back for seconds, of course! We also had a few who mentioned that our food was the best at the event, which is always nice to hear, especially since there were 55 other restaurants participating! Needless to say, we were thrilled with the compliments. If you didn't get a chance to check us out at The Taste of Yorba Linda this time, swing on by next year as we plan on being a big hit yet again! Recently we were featured at the OC Food and Wine Celebration's, Passport to Chefs event. It was sponsored by the Rooster's Foundation, a charity and social organization from Orange County that raises hundreds of thousands of dollars each year for disadvantaged children. On this special night, guests enjoyed a unique food celebration, while savoring a sumptuous gourmet five course meal, paired with fine wines and prepared tableside by Yves and his sidekick for the evening, Ernesto. Many other premier Orange County chefs were invited to participate as well. It was a grand success, raising over $150,000. Last month we hosted a wine tasting at the bistro, which served as a fundraiser for wonderful group known as The KidSingers. The KidSingers was founded in 1997 by a 30-year choral director/visionary, Paul Mc Neff. The group consists of 150 at risk youth from Santa Ana in grades 3-12. This award winning KidSingers' program has served as a beacon of hope and inspiration to a more hope filled life. Not only does the program teach kids how to sing and perform, but it helps by increasing their self-esteem, providing a safe haven by keeping kids off the streets, away from gangs, drugs and destructive behavior. We are thrilled that we could help this worthy group raise funds by hosting this event. It was a grand success, as we had a total of approximately 80 people in attendance and they earned $20,000 in donations that day, apparently the most they have made on a small fundraiser to date! We will update you all as soon as possible. We recently had a group of ladies who did a marathon at Yves. These gals have been friends for many years and have been coming into our restaurant for the past 20 years to plan their yearly trip to Europe together. In the past, they have enjoyed leisurely lunches which usually last for 4-5 hours discussing and planning the details of their upcoming travels. It soon increased to a 10 hour lunch and dinner. However, not long after they increased their time spent with us to 10 hours, another group of ladies came in and stayed all day, a total of 12 hours. Yves soon informed the other gals that their record had been broken. The marathon ladies knew then that it was on, the challenge that was before them. They told Yves that they were going to go beyond the 12 hours set by the other ladies and set a record. Yves opened the restaurant early for them, at 10am and they started off with their morning coffee. Next, they moved to a couch for some appetizers and then into the dining room from 1-5 for lunch to discuss many things including their upcoming trip together, religion, etc. After lunch, they moved over to the wine bar and enjoyed some drinks together. Later, they enjoyed a delicious dinner. They had friends stop by throughout the day to visit them and their friends also donated money, which the gals donated to the Eli Home, a wonderful organization in Anaheim that helps to shelter, comfort and encourage victims of child abuse. The day was a great success on many levels for the ladies. They set a new record of 14 hours spent dining at our restaurant and boy did they have fun while doing it!

The theme this year was Jazzed About 20. We, at Yves were very excited to get involved this year especially since it was a jazz theme. For the past 6 months, we have been all about live jazz music on Wednesday-Saturday nights and it has been very successful so far and has generated a lot of excitement. We served up some delicious favorites which included Pollo con Risotto and Yves' famous Bread Pudding. Folks, this isn't your run of the mill bread pudding. Ours is a rich bread pudding with raisins, cranberries and candied pecans served warm in a pool of creme anglaise. The guests that evening kept coming back for more and soon more curious souls ventured over saying we were told the bread pudding is unbelievable, where is it? We gave away some of our jazz shirts to a few lucky winners and we also handed out 20% off discounts for everyone who visited our booth. We had a fun night and towards the end of the evening there were a few guests that came by and said that it was unanimous amongst friends and family alike, that Yves' booth served up the best food at the entire event. Introducing Sara Lindsay, Singer/Songwriter

She has played jazz piano, drums and vibes since the very young age of six and has been delighting her fans throughout Los Angeles and Orange County with her rich, smoldering voice. She is totally in her element on stage as she performs for her audience with a unique ability to make everyone feel as though she is performing just for them. It is truly hard to believe that she is merely 21, as she commands the stage as one who is many years her senior and sings with such emotion and believability...truly that of an old soul. We have had the privilege of showcasing The Sara Lindsay Jazz Quartet here at Yves' Restaurant each week since March. We, along with our many customers, have become huge fans of Miss Sara Lindsay and that is why we are thrilled to announce that on Wednesday, July 14th, from 8-11pm she will be performing her original music from her debut album, The Songs. Sara recently won the title of Best Female Singer/Songwriter in a contest sponsored by OurStage, for May, 2010. So, if you have enjoyed her jazz flair, you won't want to miss her award winning originals! If you didn't have an opportunity to join us on Thursday, the 2nd we had another fantastic evening of food and wine pairing with Mark and Jim. This time we featured a menu made up of Top Chef styled grill items paired with wines from boutique, smaller wineries. We started the evening out with a beautiful Italian Prosecco from La Marca (WS Top 100) paired with Grilled and Chilled Shrimp over a Mango Salsa that everyone wants the recipe for. Surfrider, Pinot Grigio followed with a grilled Mediterranean Veg Pizza that was simply smashing. There was a somber moment when our friend and partner Robert made mention of the passing of Yves' father as the Martin Ray, Pinot Noir was served. However, in celebration of his life, the evening continued and Salmon with a Raspberry Beurre Blanc was paired expertly with the wine. Following, was a very fine Syrah frim Dutton-Goldfield's Single Vineyard Cherry Ridge paired with American Classic Sliders. Then, a glorious 100+ year old vine Zinfandel from Pato Vineyard was served from Neyers with Lamb Loin. The evening closed with Yves' sumptuous S'mores cookies (think cocoa marshmallow meringue) paired Heitz Ink Grade Port made from traditional Portuguese grapes grown in Napa Valley. All who attended had a wonderful night and agreed that it was one of our best classes yet. We are having a fantabulous Summer Beer and Pub Food Class on August 5th, so sogn up now before it fills up! In anticipation of Friday's World Cup Soccer finals in South Africa, Yves hosted an evening of South African influenced dishes paired with six wines from four distinct and historic South African estates. His crazy cohorts Mark and Jim were on hand to share the incredible winemaking history of South Africa with a nearly sold out crowd who were as rapt by the tales and enamored by the food as they were by the basketball game that was broadcast on the screens in the restaurant. Many were surprised to learn that South Africa has been producing wine since 1652 and even more were surprised by the very delicate and elegantly European style of the wines. Everyone enjoyed Nederburg Lyric (a blend of Chenin Blanc, Sauvignon Blanc, and Chardonnay) with Ginger Marinated Prawns served with a lime butter sauce. The next selection featured one of Yves' favourite offerings from our vast wine list; the 2007 Meerlust Chardonnay paired with Piri Piri Chicken. A delicious Fleur du Cap Pinotage was paired with a spicy, Marguese Sausage plate followed by an elegant Meerlust Pinot Noir served with Veal Frikadelles. As the evening came to a close, the guests enjoyed Venison skewers supported by a blend of Merlot and Cabernet named Prima from the Le Bonheur Estate. And, if that wasn't enough, a fine cheese plate was offered with a very special bottling of cellar aged, 2003 Fleur du Cap, unfiltered, Cabernet Sauvignon that Jim had decanted several hours before the event. It was truly one of the best food and wine pairings the boys have put together yet and a sign of many more exciting nights to come.
Creative Cocktails & Scintillating Spirits Now At Yves

There are several avenues to choose from when crafting a Cocktail Menu. You can take the obvious route that the typical “Chain Type” Restaurants wander down and offer the “Big Brands” available everywhere in colourful, overly sweet, and all tasting like Cotton Candy or Bubble Gum Drinks filled with inexpensive, artificial flavours guaranteed to give your guests a raging hangover the next day. You can go absolutely 21st Century and bedazzle your guests with “science” by using microbiology, liquid nitrogen, “essences,” “infusions,” and delusions and charge up to $25.00 for a Martini that glows in the dark. Or you can do as we have chosen and return to the Classics and use fresh and modern ingredients and offer your guests delicious, flavourful cocktails. Each one of our Specialty Cocktails has been hand-crafted from Classic Recipes of the past. There is a familiarity and history, but there is our “Signature” as well. All are made from an array of unique Spirits that we are very proud of. So, grab a few friends and head on over! Do you consider yourself brave and adventurous? If so, then you'll be sure to stop by soon to feast on Yves' escargot. Many of our wonderful guests have been requesting that Yves make escargot. Here is a little history and some fun facts about escargot. The French reportedly consume approximately 40,000 tons of escargot each year, making them the world's largest consumers of escargot. Much of this is imported, as the French are currently unable to produce enough snails domestically to meet the demand. Consumption is especially high during festive times as escargot is a somewhat expensive delicacy. Although mainly considered a French dish, escargot have been eaten for many thousands of years.Today there are over 100 different types of edible snails. In France, only two types are commonly eaten: the 'Petit-Gris' (which is French for 'Little-Gray') and the 'Escargot de Bourgogne' (which is French for 'Burgundy Snail'. This special will be for a very limited time, starting this Friday, 06/28th. So, grab a friend and get your brave on and hurry over! Well, another tax season has passed us by, but not without another great deal from Yves. Last month on tax day, April 15th, we offered our Tax Relief special all day which boasted a 20% discount. We sent out an email blast to our loyal customers and fans on Facebook. We were definately able to stimulate your appetites without taking a big bite out of your pocket book. It was a huge hit again this year! We had a fantastic response. We hope to do more of these types of specials throughout the year. So, please stay tuned and follow us on Twitter and Facebook to keep up on our spur of the moment fabulous values! On Thursday, April 8th, we had another great wine class here at Yves'. Glenn Alexander, from Sanglier Cellars joined us that evening. We were busting at the seams, with 60 guests in attendance, that we overflowed into the dining room. Our enthusiastic crowd couldn't wait to taste our five wines and delicious tapas. We started off with 2008 Kick Ranch Viognier accompanied by our fruit and cheese plate. The second taste was 2008 Russian River Valley Pinot Noir accompanied by a Duck confit tart, topped with a black cherry and rhubarb pinot noir reduction. Taste #3 was a 2007 Kick Ranch Syrah accompanied by Beef Bourguignon, a French beef stew with a rich red wine tomato sauce. Our fourth taste of the evening was Rouge du Tusque, accompanied by a Lamb pizza, consisting of a grilled flatbread pizza topped with lamb loin, wild mushrooms and Gorgonzola cheese. Our final taste of the evening was Rosé du Tusque, accompanied by a Strawberry tart, consisting of a flaky crust filled with custard cream, topped with fresh strawberries and a plum glaze. Our wine classes usually go until about 8pm, but on this night, there was so much chatting and mingling going on that most of our guests stayed for our live jazz which goes until 11pm. Maybe it's an image of a classic car that pops into your head. Or, perhaps you recall a favorite joke, a fond memory of a hilarious mishap, or possibly a favorite movie that you have referred to as a classic. The word classic means something that is a perfect example of a particular style, something of lasting worth or with a timeless quality. It denotes a particular quality in art, architecture, etc. Here at Yves, when it comes to our menu, some of the choices are truly classics with a twist. One great example of this would be the hamburger. Here at Yves, we offer you eight different varieties of this classic. One of our top sellers is the Kobe Kobe Style. A huge 1/2 lb. Prime Kobe style beef, grilled hot house tomatoes, romaine lettuce and aged creamy Gorgonzola cheese served on a Kaiser roll with habanero roasted red bell pepper aioli. Also equally popular is our French burger which consists of Brie, brandied mushrooms and onions, Dijon aioli on a French baguette. These are just a few of our mouthwatering creations. Stop in soon and give one a try! Our wine class held Thursday, March 18th was a memorable night. We had 40 guests in attendance. Joining us this evening were Mark Bernstein and Jim Ward from the Wine Warehouse. The mood was fun and energetic as everyone was excited to try some special and yet very unusual wines. We kicked off with Ecclestone, where this wine truly is all about blending and experimenting. It represents a careful mix of most of the Tangent varietals (Pinot Gris, Pinot Blanc, Albarino, Viognier and Reisling). It was accompanied by sweet potato tempura shrimp with a tangy mango fresh fruit chutney. Next up was Edelzwicker, which loosely translates to noble blend. Fruity and nicely balanced, it has a welcome thread of acidity and medium body and complimented an assortment of fabulous gourmet cheeses. Taste # 3 was Negrette, with aromas of currant, plum spice and leather, and on the palate it has a creamy texture with flavors of strawberry and cranberry. We thought pairing this with a whole grilled artichoke, quartered, marinated in fresh herbs and served with a savory red bell pepper aioli would do the trick...and it did! Cirque du Vin, which roughly translates wine circus, was our fourth taste, and is a blend of 25% Petite Sirah, 23% Cabernet Sauvignon, 19% Merlot, 18% Syrah and 15% Cabernet Franc. This wine is bold and sexy, yet elegant and food friendly at the same time, and paired nicely with our wildly popular grilled prosciutto pizza. Taste # 5, Syrache, is full of bright fruits on the nose and palate, especially cherries. This wine is about the fruit and not the oak and is designed for those who like to explore. Accompanied by our lamb tenderloin skewers and garlic mashed potatoes. Our final taste of the evening, Red Electra, is Quady's 4% version of Orange Muscat, a bizarre wine with a delicate spritz. We dazzled our guests tastebuds by pairing this with a double chocolate raspberry tiramesu, made with bittersweet chocolate and topped with a drizzle of raspberry coulis. Grammy Nominated Jazz Artist, Anne Walsh, Here At Yves!

We are very excited to announce that on Saturday, March 27th, the Grammy nominated artist Anne Walsh will be gracing us with her lush, velvety voice. Anne's live shows focus on smooth Brazilian grooves which are always a huge hit with her audiences. Anne's latest release, Pretty World, is comprised of Brazilian jazz music and heart tugging ballads, by the likes of Ivan Lins, Djavan, and Jobim, but also original lyrics written to the music of Pat Metheny, Steps Ahead, Keith Jarret, and standards from The Great American Songbook including Cole Porter and George Gershwin. Anne is originally from Massachusettes. She was born into a musical family (her father Frank was a baritone/tenor who sang the lead in many productions for local light opera companies) where she was encouraged by her grandmother to enter show business. Early on, Annes' parents knew they had a singer on their hands. After graduating college, Anne moved to Southern California to pursue her dream. If you are familiar with Anne, then you already know she possesses an innate ability to make everyone in her audience feel like she is performing just for them. And, for those of you who haven't yet discovered Anne, once you hear this dynamic song stylist, you won't soon forget her. Our first month of jazz has come and gone. We have had the pleasure of featuring several distinguished jazz artists that bring their own unique style, that is new and exciting each night. With jazz being so versatile, we have had something to offer everyone. Our talented performers deliver the many different flavors of jazz that exists today. From the Great American Songbook, which is a vital part of a jazz musicians repertoire, also known as Jazz Standards, to Blues Jazz, Swing, Cool, Modern,Bossa Nova, etc. If you haven't had a chance yet to come by and catch one of our shows, it's not too late to check it out and see what all the buzz is about. We've been known for our souffles since we opened twenty years ago. Often guests drop by after a movie or for a late night treat and enjoy one of the our seven delicous souffles including three different chocolate flavors, lemon, blueberry, Grand Marnier and Yves' Special, souffle served with a sauce made up of Bailey's Irish Cream, Amaretto and Grand Marnier. If that wasn't enough to satisfy your sweet sensation, we've added another dessert delight that you don't want to miss... Bread Pudding! If you like bread pudding, well get ready cause this version will knock your tastebuds into a flavor frenzy! Yves worked for weeks getting the texture and flavors that he wanted and he definitely perfected this one! Dip you spoon into this rich warm bread pudding with raisins, cranberries and candied pecans served in a pool of creme anglaise and topped with vanilla ice cream. It's the perfect ending to a great dinner or simply as a late evening snack while you listen to jazz in our new live jazz bar. Last night we Jazzed Up when we kicked off our first night of Live Jazz! We've made some changes inside so that the jazz band can be seen and heard from both the inside wine bar area and the enclosed patio dining area. Guests enjoyed time with friends and family while listening to the fabulous opening band, The Marieve Herington Band singing jazz classics. We had guests that came for dinner and stayed for the jazz as well as those who dropped by later to just sit and relax with the music. Everyone loved their free t-shirt featuring our tag line All Jazzed Up! in English, Spanish, Italian and French. We still have a few freebies left for those who join us tonight. Wednesday, February 10th, 2010 from 8:30pm-11:30pm - Featuring The Marieve Herington Band. Whether you're a jazz aficionado, or you just want to relax and enjoy some outstanding live jazz music with family and friends, you won't be disappointed! Our Italian Wine Class held Thursday, January 28th was a huge success with 80 guests in attendance - our largest class yet! Guests enjoyed tastings of six different wines, fantastic food and lot of fun! We always love it when Ciro Cirillo from Mission Wines shares some of the fabulous wines from his portfolio. He began with Falanghina Sannio which is a light, crisp and very dry wine with a hint of banana. This fresh start was accompanied by prosciutto melon wraps with an orange and honey basil coulis. Next up was Aglianico Sannio, an intense red wine with good fruit and a dry finish, perfect when served with strong gourmet cheeses so that is just what we did! Morellino Di Scansano, a wine with an extremely deep garnet color with notes of cherry, blackberries and violets and is ideal with earthy flavors was our third taste and was superb with our mushroom stuffed ravioli. Just when you thought you had tasted the best, Ciro introduced Nero D'Avola, an outstanding wine with a dark, dense, ruby color and marvelous hints of black cherry that matched perfectly with the chicken, spinach, mushroom and cheese stuffed shells served with a spicy tomato cream sauce. Taste #5 brought the house down for many of you! Arbos Primitivo Castellani, a massive big wine also known as Italy's Zinfandel served along side our new main course house favorite, a rich Osso Bucco. It was the climax of the evening unless of course you are a dessert lover in which case Taste #6 really pushed you over the top of culinary happiness. Prosecco Millesiamato Cirotto, a slightly sweet sparkler with the tiniest of bubbles complimenting the newest addition to our dessert menu, warm bread pudding with raisins, cranberries and candied pecans served in a pool of creme anglaise and topped with vanilla ice cream ended the tasting with just the right touch.
